STORING WINE

Wine has 4 Enemies:

Temperature:

Tempterature can change the taste, bouquet and characteristics of a Wine. An ideal temperature for both Red and White Wine is a steady temperature between 50 and 55 degrees Fairenhiet.

Light:

Store Wine in a dark place. Even tinted bottles are no protection against ultraviolet rays of the sun.

Dryness:

Storing wine on it's side keeps the cork moist and swollen creating an air tight seal. Wine stored in an upright position causes the cork to dry out and eventually turns to vinegar.

Vibrations:

Avoid disturbing the bottles. This one should be obvious.

Most white wines such as Chenin Blancs, Sauvignon Blancs, Loire Wines, Rieslings, Chardonnays, When served too cold; the aromas and flavors are minimized. The best temperature to serve these Wines is:
45 degrees F or 7 degrees C.

Full bodied, high quality White Wines including Sauternes and rich White Burgundies, and Light Red Wines such as Beaujolais are best served at:
50 degrees F or 10 degrees C.

Red wines including Cabernet Sauvignon, Merlot, Bordeaux, Zinfandel, Rhones and Syrah/Shiraz are best served at:
60 degrees F or 15 degrees C.
